Not to change the subject from bagels and cheese (two of my favorite things), but I just have one thing to say...
It's JELLYBEAN season!!!!!
I was at the pharmacy getting some prescriptions filled for this plague I can't shake and I discovered that it is indeed the best time of year for jellybeans. Lifesavers jellybeans, starburst jellybeans, jellybelly jellybeans. Easter always brings out the best plethora of my favorite chewy candy.
I could never pick a favorite cheese. I love them all equally. Except american, but that's not really cheese.
I have a very special place in my heart for processed cheese. Some of my favorite childhood memories is stuffing my face with nachos (aka chips and a pile of fake cheese) at Whalers games.
Goat cheese >> some sort of super spicy cheese thing I get from Sam's Club > Feta > Blue/Gorgon >>>>> Good, sharp cheddar > fresh mozz> Swiss/ Ementhal > processed cheese (American, nacho cheese..) > Higher quality flavorless cheese >>>> Cheap quality flavorless cheese
(let it be said, that I will not turn down ANY of the above, even the ones at the bottom. <3 )

Phi, you're on the losing side. Basically just you And Bandeto against the world.
(I was thinking the same thing, Dave. And I want an NY bagel, not some average CT bagel, or poopy Dunkin bagel)
Damn Bonz. even ITM agreed. keep your creamy mess of a topping but don't be throwin bows
More importantly I only eat my bagels with egg and cheese these days. I stay away from starches and breads - NY egg and cheese is just inevitable for me at work

Gouda is probably my favorite cheese, but it's not versatile enough to be the only cheese I ever eat for the rest of my life. For that, I guess I'd have to go with sharp cheddar.

I recently discovered baked lemon curd ricotta (is it dessert? is it breakfast? YES!!). And also this, which is one of the most delicious domestic cheeses I ever had:
